Rhubarb Bliss

Lately I've been on a smoothie kick again.


Truthfully, I've gone through phases over the years where I make them every day... and then I stop... and then somehow, they find their way back into my routine.


This time feels different.

Over the past few months, I've really been trying to dial in on my health.


Perimenopause has done me dirty for one thing. šŸ˜… And honestly... I have to face the fact that I'm not getting any younger. If I want to feel better, have more energy, and take care of this body God gave me, it's time to make it a priority.


One thing I've realized is that smoothies make that a little easier.


Around here, one kid wants chicken nuggets, another wants grilled cheese, and I'm over here trying to squeeze a few more fruits and vegetables into my day. Instead of making yet another separate meal for myself, I can throw a handful of ingredients into my Magic Bullet, blend it for about a minute, and I've got something that's ready in a minute.


It's quick, it's simple, and honestly... it helps me take care of myself without adding more stress to the day.


So... the smoothies are back.


I usually have at least one every day, and one thing I've been trying to do is sneak in fruits and vegetables that I don't normally eat.


The last time I was wandering around Sprouts, I spotted frozen rhubarb.

I honestly can't remember ever eating rhubarb in my life.

Did I necessarily want to try it?

Not really. šŸ˜‚

But I knew it had some great nutritional benefits, so I figured...


Into the smoothie it goes.


Today's combination started with blueberries because they're one of my favorites. I also had a few apples sitting in the refrigerator that needed to be used, so those went in too.

Then I added the rhubarb.


Y'all...

It was SO good.

It had the perfect balance of tart, sweet, and creamy. I wasn't expecting to love it as much as I did, but I finished the whole thing thinking...

"I might just make this exact smoothie again tomorrow."

That's usually how I know it's a keeper.


Why I Loved It

Besides tasting amazing, this smoothie packs quite a bit into one glass.

  • Protein to help keep me full

  • Blueberries full of antioxidants

  • Apples for fiber

  • Rhubarb for extra vitamins and antioxidants

  • Greek yogurt for protein and gut health

  • Trace minerals for a little electrolyte boost


I'm learning that eating healthier doesn't have to mean complicated recipes.

Sometimes it's simply using what you already have, trying one new ingredient, and discovering something you actually enjoy.


Who knew rhubarb would surprise me?

Apparently... I just needed to give it a chance.

Rhubarb Bliss Protein Smoothie

IngredientsĀ (eyeball amounts)

  • ¼ cup almond milk

  • ¼ cup honey vanilla Greek yogurt

  • ā…› cup (or less) orange juice

  • ½ cup apple slices

  • ¼ cup frozen blueberries

  • ā…› cup (or less) frozen rhubarb

  • ¼ scoop protein powder

  • Several drops of trace mineral drops (optional)


Directions

  1. Add everything to your Magic Bullet (or favorite blender).

  2. Blend until smooth and creamy.

  3. Taste and adjust if needed.

  4. Enjoy!

Simple ingredients. Big benefits.


I think this is becoming more than just a recipe.

It's another reminder to myself that taking care of my health doesn't have to be complicated. It doesn't have to look perfect. Sometimes it simply looks like blending a few healthy ingredients together while the kids are eating chicken nuggets and grilled cheese.


And honestly...

I'm okay with that.
