Easy Air Fryer Chicken & Loaded Baked Potato Dinner

Sometimes dinner is about feeding everyone.


And sometimes dinner is about figuring out what you can eat while the kids are happily surviving on the same three foods they’ve requested on repeat for two straight weeks 😅


If you know, you know.


This was one of those nights where I wanted something that was good, filling, and flavorful without creating a giant mess or spending forever cooking separate meals.


Honestly, these individually packaged chicken breasts from Perdue have become one of my favorite easy dinner finds for nights like this. I keep them in the freezer, pull one out, season it up, toss it in the air fryer, and dinner is basically done in around 20 minutes.

Minimal effort. Minimal cleanup. Actual real meal.


And let me talk about these giant russet potatoes from HEB for a second because I don’t think I’ve mentioned enough how much I love that store. Not only are the potatoes huge and perfect for loaded baked potatoes, but HEB genuinely does so much for the community too. They were even out supporting a local community event today, which honestly just makes me love shopping there even more 💛

What I Used

Chicken

  • Individually packaged Perdue chicken breasts

  • Cooking spray or oil

  • Chicken seasoning

    (I used “Taste That’s Im-peck-able” seasoning)


Potatoes

  • King size russet potatoes

  • Velveeta cheese sauce

  • Bacon bits

  • Green onions

  • Salt & pepper


Optional

  • BBQ sauce for dipping

    (I used Kinder’s Black Garlic BBQ sauce and it was SO good.)


How I Made It

Chicken

  1. Spray chicken lightly with cooking oil.

  2. Sprinkle generously with seasoning.

  3. Air fry at 390°F for about 18–22 minutes, flipping halfway through, until the chicken reaches 165°F internally and the outside is crispy.

(Cook time may vary depending on thickness and air fryer model.)


Potato

  1. Wash potatoes and poke several holes with a fork.

  2. Microwave on high for about 8–12 minutes, flipping halfway through.

(Microwave times will vary depending on potato size and microwave strength.)

  1. Once soft, cut open and fluff the inside with a fork.

  2. Add cheese, bacon, green onions, salt, and pepper.


That’s it.


Simple comfort food for nights when you’re tired, cooking for yourself, and just want something easy that still tastes really good.


And yes… the BBQ dipping sauce absolutely completed the meal 😅
