Quick Blackened Chicken Cobb Salad

I’ve been trying to make healthier choices lately, so this week I decided to revisit salads for dinner.
And honestly? This is still one of my favorites.
A Cobb salad… but with a little twist: blackened chicken.
I used the Tyson Blackened Chicken Breast Strips this time because life is busy and sometimes convenience is what helps healthy choices actually happen.
They make dinner ready in less than 20 minutes, which is a huge win around here.
I added salad blend, shredded carrots, hard boiled eggs, shredded cheese, bacon crumbles, and then topped it all with ranch dressing.
Now let’s talk about the ranch for a second. 😂
My current favorite is the HEB ranch, but before that it was definitely Golden Corral ranch. I used to literally go in there just to buy the ranch before ours closed down.
Probably a little crazy… but honestly no regrets.
And we also have a local BBQ restaurant with an amazing jalapeño ranch that I’ve bought before too.
Please tell me I’m not the only one this passionate about ranch dressing.

And yes, I still had to make multiple meals because my family will absolutely not touch this salad. 😅 But honestly, that’s okay too because it’s so quick to throw together, and I’m trying to make better choices for me.
Lately I’ve realized healthier choices do not have to be complicated to still count. Sometimes it’s just finding quick meals you actually enjoy enough to make again.
And for me… this salad definitely earned a spot back in the dinner rotation.
